Comment préparer
Eplucher les poires en prenant soin de garder la queue. Les couper en deux. Oter le cœur. Plonger les poires dans une eau citronnée afin d’éviter qu’elles ne noircissent.
Porter le vinaigre à ébullition avec le sucre, l’eau et les épices. Quand le sucre est fondu, ajouter les moitiés de poire et pocher à frémissement durant 10 minutes.
Retirer les poires et faire réduire le jus.
Servir les poires nappées de jus en accompagnement d’un magret de canard, avec une purée de patate douce violette par exemple.
Petite astuce
Profitez des actions sur les poires pour réaliser cette recette en plus grande quantité. Conservez les poires dans un bocal dans leur jus pour un usage ultérieur. Vous pouvez substituter le sucre par du miel pour une touche d’originalité supplémentaire.
