Suure Leberli mit Röstzwiebeln

Was Sie Nötige Zutaten

Personen

250gr Kalbsleber (in 1 cm dicke streifen)

75 gr Schalotten (in feine Würfel)

50 gr Apfel zb. Gala (in 5 mm würfel )

50 ml Hugo Reitzel Balsamico Dunkel

80 ml Kalbs jus

50gr Cornichons von Hugo Reitzel

50gr Zwiebelringe

Salz, Pfeffer, Paprikapulver, Mehl, Sonnenblumenöl

Wie man Zubereitung

Die Kalbsleber in heisser Pfanne mit ein wenig öl kurz von allen Seiten anbraten und aus der Pfanne nehmen.

Jetzt die Schalotten zusammen mit den Apfel Würfel. Kurz in der Pfanne anschwitzen.

Ablöschen mit dem Balsamico Essig, und ca 2 min einreduzieren lassen.

Das gleiche nun mit dem Kalbs jus ,dazu geben und 2 min einreduzieren

Jetzt die Leber Salzen und Pfeffern und zurück in die Sosse geben

1 min kurz alles zusammen aufkochen und sofort Servieren.

Die Zwiebelringe mit Paprikapulver und Mehl besteuben und knusprig frittieren.

Als Garnitur die Röstzwiebeln und Cornichon würfel über die Leber streuen.

kleinerTipp

Wichtig die Leber nicht zu durch zu Garen, da sie sehr schnell trocken wird !
