Comment préparer
Dans une casserole, mettre à bouillir 50 cl d’eau avec le bouillon cube. Laver et couper les aubergines en petits morceaux (comme ça elles cuisent plus vite). Les retirer à mi-cuisson.
Faire chauffer une grande poêle ou un fait tout à feu vif avec la moitié d’huile d’olive. Ajouter les morceaux d’aubergines et laisser cuire 10 min en remuant de temps en temps. Les retirer de la poêle et mettre l’autre moitié de l’huile d’olive à chauffer dans la poêle.
Ajouter les Fregola , les faire dorer légèrement 1 min. Ajouter le bouillon et remuer de temps en temps pendant 10 minutes. Puis ajouter les tomates et continuer de remuer souvent pendant encore 5 min. Mettre les morceaux d’aubergines et remuer encore 5 min. Gouter, et n’hésitez pas à continuer à cuire en faisant mijoter si nécessaire….
Laver quelques feuilles de basilic frais et servir les Fregola en déposant 3-4 feuilles de basilic sur chaque assiette.
