Die Eier 6 Minuten kochen. In Kaltem Wasser abkühlen und schalen.

Die Radieschen und Rucola waschen. ie Radieschen in zwei Hälften schneiden.

5 Essiggurken zur Dekoration beiseite legen. Die anderen in Brunoise schneiden.

Garnieren Sie die Brotscheiben mit Mayonnaise und die Brunoise mit Cornichons. Das Roastbeef und ein halbes Ei auf jeder Scheibe anrichten. Garnieren Sie mit Radieschen, Gurken, Pinienkernen, Rucola und Trockenblumen.
