Wie man Zubereitung
Die Gerste in Salzwasser bei mittlerer Hitze 30 Minuten lang kochen lassen. Am Ende der Garzeit sollte noch etwas Kochwasser vorhanden sein, aber das Korn sollte weich sein.
In der Zwischenzeit das Gemüse waschen und die Gurke schälen.
Das gesamte Gemüse und den Apfel in kleine Würfel schneiden, ebenso die getrockneten Tomaten und die kleinen Zwiebeln.
In einer Schüssel den Frischkäse und das Olivenöl verrühren.
Gerste abseihen, falls noch Kochwasser vorhanden ist, dann kurz abspülen. Bei Bedarf unter kaltes Wasser halten, um sie abzukühlen.
In einer grossen Schüssel die Gerste, das Gemüse und die Frischkäsezubereitung miteinander vermengen. Probieren und gegebenenfalls nachwürzen.
Mindestens 1 Stunde kühl stellen.
Beim Anrichten einen Metallring oder alternativ eine kleine Schüssel verwenden und gut zusammendrücken. Die Toppings hinzufügen.

- Tipp 1: Machen Sie dieses Rezept 100% pflanzlich, indem Sie den Frischkäse durch Avocado ersetzen.
- Tipp 2: Gerste ist nicht für Allergiker geeignet, ersetzen Sie sie durch Quinoa für eine glutenfreie Variante.
